In a 6 quart pot, bring 3 quarts water and 1 tsp. salt to a boil over high heat. Add orzo and cook until al dente, according to package directions. Drain well. Pour into bowl and toss with olive oil. Rinse and dry pan. Using same pan, melt butter. Add shallots and brown, stirring often, about 3 to 4 minutes. Add garlic and lightly sauté for one minute. Add orzo, blend well and cook just until orzo is warmed through. Remove from heat, add green onions, and salt and pepper to taste. |
