WHITE BEAN & GARLIC SALAD
Sauté onion and garlic in ¼ cup oil over medium-high heat for 3 minutes, stirring frequently (do not burn!) Add sherry and cook until the liquid evaporates, 7 or 8 minutes. Add beans along with the ham, pepper, herbs, vinegar, chopped garlic and remaining oil. Mix gently. Season with salt and pepper. Chill and serve at room temperature. |
