Garlic Recipe of the Month

WHITE BEAN & GARLIC SALAD

  • 1-1/2 Cups canned white beans
  • 1 large red onion – diced
  • 10 cloves CHRISTOPHER RANCH PEELED GARLIC
  • ¾ cup olive oil
  • 1 cup dry Sherry
  • ½ lb. smoked ham – diced
  • 1 small yellow or red bell pepper – seeded and diced
  • 2 cups fresh basil – finely chopped
  • 3 tsp. each fresh chopped rosemary, thyme, oregano
  • 1/3 cup balsamic vinegar
  • 2 cloves CHRISTOPHER RANCH GARLIC – chopped
  • Salt & Pepper to taste

Sauté onion and garlic in ¼ cup oil over medium-high heat for 3 minutes, stirring frequently (do not burn!)  Add sherry and cook until the liquid evaporates, 7 or 8 minutes.  Add beans along with the ham, pepper, herbs, vinegar, chopped garlic and remaining oil.  Mix gently.  Season with salt and pepper.  Chill and serve at room temperature.
