Christopher's Baked Garlic

  1. Cut about 1/2" off tips of several whole Christopher Ranch Garlic bulbs.
  2. Gently remove outer layers of skin from bulbs but leave the bulbs intact.
  3. Place them cut side up in baking pan and drizzle with olive oil, sprinkle with salt, pepper and favorite seasonings or herbs.
  4. Fill baking pan with enough water to just cover the bottom of the pan (about 1/4").
  5. Seal pan with aluminum foil and bake at 450 for 1 hour or until garlic cloves are very soft.

To serve: Break clove off bulb and squeeze pulp out onto slice of French bread. Top with a dab of Rosemary Feta Dip.

Rosemary Feta Dip

  • 1 cup plain yogurt
  • 1 cup feta cheese
  • Leaves from 2 sprigs of fresh rosemary - coarsely chopped
Place all ingredients in food processor or blender and blend until smooth.

Add a bit of milk if mixture is too thick to blend.

If using a terra cotta baker: Soak domed lid in water 10 minutes. Place garlic bulbs in baker, cover and place in microwave. Cook on high for 2 to 3 minutes. Allow to cool.




 

Garlic Tip of the Month

Garlic should be stored in a cool, dry, well ventilated place.  It will keep for three to nine months from harvest depending on the variety.
