Gilroy Garlic Soup

  • 15 cloves Christopher Ranch Garlic - peeled
  • 3 TBLS. olive oil
  • 1 large sweet onion - chopped
  • 1 leek, white part only -washed well and chopped
  • 8 cups chicken stock
  • 2 large potatoes - peeled and chopped
  • 1 cup half and half
  • 1/2 cup chives - chopped
  • Salt & Pepper to taste

In large pot, sauté onion and leek in oil until soft.  Add stock, bring to a boil, then add potatoes and garlic.  Simmer for one hour.  Whisk in half and half to retain chunky texture or puree soup with half and half in blender if a smooth consistency is desired.  Add salt and pepper.  Garnish with chives.  Makes 6 to 8 servings   



 

Garlic Tip of the Month

How to grow garlic The cloves are planted pointed side up in the fall (Oct. & Nov.)  It is watered and fertilized until about 1 month before harvest when watering is stopped and the stem is allowed to dry.  When the stem is dry the bulb is loosened from the soil and pulled out.  Let the bulbs dry out for 1 week or so.  Tie up and hang in the garage or braid.
