GARLICKY GREEN BEAN AND BACON SAUTE`

  • 24 cloves Christopher Ranch Garlic - peeled and halved lengthwise
  • 1 tbls. salt
  • 3 lbs. green beans - rinsed and trimmed
  • 3 tbls. extra virgin olive oil
  • ¾ to 1 lb. thick cut bacon - cut into 2” lengths
  • 3 tbls. unsalted butter

Drop garlic into large pot of boiling water and cook until very tender, about 8 minutes. Using slotted spoon, transfer garlic to plate. Pat dry. Add green beans and salt to same pot of boiling water. Cook until beans are just tender, about 6 minutes. Drain beans and pat dry. Place beans in large bowl. Sauté bacon in heavy, large skillet over medium-high heat until crisp. Drain and transfer bacon to bowl with green beans. Melt butter with oil in the skillet over medium-high heat. Add cooked garlic and mash with back of wooden spoon. Add green beans and bacon and cook until heated through and coated with garlic. Season with salt and pepper if needed.

Mound green bean mixture on heated platter and serve.
